Artichokes are edible flower buds of a thistle-family plant, harvested before the buds open. Their overlapping, pointed bracts form a compact globe; the fleshy bases of the outer bracts and the tender heart at the base are the prized edible parts. A mature bud also contains a fuzzy central choke-the undeveloped florets-which is removed before eating. Artichokes are commonly served whole or trimmed to their hearts, and their hearts can be sliced for cooking. If left to bloom, the plant produces a large purple flower, while its broad, silvery-green leaves reflect its heritage as a Mediterranean crop.
